Place all ingredients for the base in thermomix (or food processor)
Blitz speed 6 for 10 seconds
Mould into mini muffin tin or press into a tart tin
Place in the freezer to harden
Next place butterfly into thermomix
Add cream and coconut sugar (if using) into thermomix and blend on speed 4 until lightly whipped
Place sour cream and lemon essential oil and continue to whip for 10sec speed 4
Place a small amount of lemon cream into base moulds
